Basil Pesto

When summer is in full swing and temperatures climb past 100, I love the option of a quick fresh meal without lots of preparation or cooking.

Basil Pesto:

  • 2 cups of fresh basil leaves from the garden
  • 1/4 cup chopped nuts (any kind)
  • 2 tablespoons of olive oil
Blend in the blender until pasty
  • Saute a purple onion
  • Cook angel hair pasta, drain, don't rinse, mix with pesto
  • Shave fresh raw-milk Parmesan on top
